Gourmet Potatoes:

- 6 medium potatoes, peeled
- 1 cup grated sharp cheddar cheese
- 1/3 cup chopped green onions
- ¼ cup butter
- 8oz. sour cream, room temperature
- 1 tsp. salt
- ¼ tsp. pepper

Boil, cool and mash potatoes. Add cheese until almost melted. Stir in sour cream, onions, butter, and salt and pepper Mix well and pour into 2-quart casserole dish. Sprinkle with paprika. Bake in oven at 350 until bubbly, about 45 minutes.
